mesmerising fillet of pork

6oz Mushrooms
250mls Cream
1 glass White wine
Salt & pepper
Medium sized Fillet of pork
2 oz Butter
One jar of Mrs Massey’s Mango Chutney

Take the pork, season well, take half the butter and melt until sizzling in the frying pan.
Sear the pork all over and put to one side.
Add the mushrooms to the frying pan with rest of butter – cook until browned.
Pour in the white wine and reduce by half.
Add jar of Mrs Massey’s chutney and warm through until bubbling.
Place pork in pan with  sauce and cook on hob with lid on until pork is cooked (about 15 mins )
Remove pork from pan and set aside.
Increase heat on sauce – add cream  and bubble until reduced to same consistency – season to taste.
Slice pork into thickish slices and serve with sauce, veg and rice.
