chilli & lemon chicken

Wonderful in the summer with a salad and perhaps spiced cous cous or in the winter with a jacket potato and roasted veg.

4 skin on chicken breasts slashed diagonally about 1 cm deep
1 lemon - juice and zest
4 tablespoons olive oil
125mls chilli & garlic ketchup
Salt & Pepper
2 cloves garlic sliced
4 shallots chopped
1 yellow pepper sliced
1 red pepper sliced
1 small tub Greek yoghurt
Handful of chopped coriander

Place in a strong zip lock food bag, the chicken, lemon juice and zest, olive oil, chilli ketchup and plenty of salt & pepper. Seal bag and marinate for as long as possible, this can be done the night before.

Once the chicken has been marinated, get it out of the bag and heat up a griddle if you have one or a shallow casserole dish with a little oil, and sear the chicken on both sides until golden brown, take out of pan and set to one side. 
Pour the marinade sauce into the pan and add peppers shallots, garlic and cook them though.

Place chicken back into pan and cook through (about 15 min) not too hot though just before serving stir in yogurt and sprinkle with coriander, serve and salivate!!
