150mls superb salad dressing
1 aubergine sliced and halved if large
4 courgettes sliced on the diagonal
1 red pepper in rustic chunks (you can rip it up)
1 yellow pepper as above
2 red onions peeled and cut into quarters
1 tub mini cherry tomatoes
3 sprigs of thyme
Salt & freshly ground pepper
Throw all of the above into a roasting dish and pour over salad dressing season well , mix around and place into a hot oven for 15 mins, stir it round and cook for a further 10 mins until golden and caramelised and delicious – eat with almost anything!
